
Eye of the Round Roast Beef
Roast beef is always a family favourite and this traditional cut is 28-day matured and hand selected for you at Gleesons. It's a very lean cut with no waste that's perfect for roasting and easy to carve.
Preheat oven to 180℃. Rub the beef all over with olive oil and garlic and season generously. Place stalks of celery, carrots and onions into the bottom of a roasting pan and add water to cover the vegetables. Place the roast, with the fat side up on top and into the oven. Cook for 1.5 – 2 hours for medium. You should check to make sure that you still have enough water in the bottom of the pan after about an hour. Remove the roast from the pan and let it sit for at least five minutes before carving. Use the juices in the pan to make delicious gravy…enjoy!
